Relying on your concrete to be level isn't a good way to set the top of your wainscot. (looking at the "whoopdedoo's" 6:53 shows why). On long runs I prefer piano wire over snapping a chalk line because I can pull it to extreme tensions so it won't dip in the middle. Set the top of your wainscot to the line and caulk or foam the bottom. This ensures a nice fit both above and below the "Z" metal to prevent water getting in and warm air getting out.
Not using foam top and bottom to seal the cracks or some type of double sided seam tape to increase efficiency I think kind of defeats the purpose of your build if you aren't going to trap that warm air inside.
Overall not bad for amature work but I suspect when you replace it the first time you will make a few changes. (which makes it that much more important to get your framing square, plumb, and level).
